Vegetable Ratatouille with Cod

Vegetable Ratatouille Recipe

Vegetable Ratatouille

Ingredients (4 people)

250g Cod (unsalted)

3 Tomatoes

2 Courgette

1 Aubergine

1 Green Pepper

1 Onion

2 Cloves of Garlic

Olive Oil

Salt

Sugar

Black Pepper

Preparation

Cut the onion and garlic into small pieces and fry lightly with olive oil.

Wash the courgette, aubergine and green peppers. Peel the tomatoes and cut all these ingredients into cubes.

Set a sauté pan over medium heat and when hot, pour 2 spoons of olive oil. Mix all the vegetables in the pan and cook them for 15 or 20 minutes until the pieces are soft. Add some salt and sugar.

Finally, incorporate the cod and let it cook for a few minutes more.

If you prefer an original Sicilian tasting you can replace the cod with anchovies. Add vinegar, sugar, chopped olives and capers. Yummy, yummy…
