Watermelon Gazpacho Recipe

Ingredients (4 cups)

600g Tomatoes

500g Watermelon (without skin and seeds)

35g Onion

40g Green Pepper

1 Clove of Garlic

1 Tablespoon of Olive Oil

Vinegar (1 to 3 tablespoons)

1/2 Teaspoon of Salt

Preparation

Wash the tomatoes and peel the pepper and the onion. Cut it all into large pieces. Peel the garlic and remove the seed.

Throw everything in a blender cup. Then strain it to make it thinner.

Now we will cut the watermelon into pieces. We will add it to the blender with the salt, oil and vinegar. Stir for a few minutes.

Let cool a couple of hours in the fridge. Garnish with a leaf of mint and watermelon balls.
